Mashing temperature
Fase1: Miscelazione
-Aggiungere la macinatura in 70 litri di acqua a 59°C e gradualmente aumentare la temperatura fino a 63°C
-Ammostamento alla t 63°C per 60 minuti
-Ammostamento alla t 72°C per 15 minuti
-Ammostamento alla t 78°C per 2 minuti
Fase2:Filtrazione
Separare il mosto dalle trebbe e lavare il tino con acqua a 75oC
Fase3: Bollitura
Durata: 90 minuti; il volume del mosto diminuisce di 8-10%
Contando dall’inizio dell’ebollizione, dopo 5 minuti aggiungere il Fuggles, dopo 80 minuti aggiungere l’EastKent Goldings, dopo 85 minuti aggiungere il Willamette
Fase4: Fermentazione
Fermentazione a 23oC
Fase5: Lagerizzazione
minimo 3 settimane a t 4oC
