Rice Flakes sind ein vorgelatinierter Brauereizusatz aus ausgewählten Nacktreiskernen. Diese werden einem Flockierverfahren unterzogen, bei dem der ganze Kern gedämpft und durch erhitzte Walzen geführt wird, um die Stärkestruktur innerhalb des Kern-Endosperms zu öffnen. Außerdem haben Rice Flakes einen niedrigen Lipid- und Proteinanteil sowie einen hohen Kohlehydratanteil, was im Brauprozess berücksichtigt werden muss.
Rice Flakes hellen Körper und Geschmack des Bieres auf, was für ein sehr trinkbares und erfrischendes Bier mit sauberem und knackigem Mundgefühl und einer schönen hellen Farbe sorgt. Rice Flakes haben eine dezentere Farbe und verleihen dem Bier im Vergleich zu Maize Flakes einen herberen, trockenen Abgang. Es kann ohne Mahlen oder vorheriges Kochen direkt in die Maische gegeben werden, da es sich um eine vorgelatinierte Zutat in Flockenform handelt.
