Maize Flakes sind ein vorgelatinierter Brauereizusatz. Ausgewählte Maiskörner werden einem Flockierverfahren unterzogen, bei dem das ganze Korn gedämpft und durch erhitzte Walzen geführt wird, um die Stärkestruktur im Mais-Endosperm zu öffnen. Außerdem weisen Maize Flakes einen geringen Lipid- und Proteinanteil sowie einen hohen Kohlenhydratanteil auf, was im Brauprozess berücksichtigt werden muss.
Maize Flakes helfen, beim Bier Körper und Geschmack aufzuhellen. Das sorgt für ein sehr trinkbares und erfrischendes Bier mit sauberem und knackigem Mundgefühl und einer schönen hellen Farbe. Maize Flakes haben eine etwas kräftigere Farbe und verleihen dem Bier verglichen mit Rice Flakes einen etwas süßeren Abgang. Sie können ohne Mahlen oder vorheriges Kochen direkt in die Maische gegeben werden, da es sich um eine vorgelatinierte Zutat in Flockenform handelt.
