Brewing news USA, TX: Twin Sisters’ Cantina brewery to fully open later this summer

San Antonio, get ready to quaff a graf.

That’s the beverage you’ll find on tap when Twin Sisters’ Cantina fully opens later this summer. The term refers to a malt beverage with an identity crisis. It’s apple-based like a cider, but contains enough malted barley and wheat to feel like a proper pint with some sweetness and a frothy head, mySanAntonio.com reported on May 10.

And most importantly, it complies with Texas Alcoholic Beverage Commission regulations for brewing beer, an easier hurdle to clear than the rules for traditional cider allow.

David Martinez and Israel Castro have partnered in the new venture. The former is an Army veteran with an extensive metal fabrication background. The latter served in the Navy, and has spent 11 years in the brewing industry.

The two have built their pub and two-barrel brewing system from hand out of reclaimed materials.

Expect to find some playful refreshments on tap. The Miley Cyder “gets people twerking,” Martinez promised. The S.A. Tea swaps hops for tea leaves to create a porch-friendly sipper dialed in to the Southern palate. Castro said he’s experimenting with a wide range of Texas products, including bluebonnets, which he suggested could be used to make a blue-tinted brew.

The business currently operates as an outdoor movie venue in which customers can bring their own alcoholic beverages and purchase snacks. If you happen to be around when they’re testing recipes, a sample of graf can be had as well.

Martinez and Castro have applied for TABC brewing permits, and aim to serve a full lineup of products before the end of summer.

Twin Sisters’ Cantina is currently open 8 p.m. to 2 a.m. Friday and Saturday at 1701 S. Hackberry St.
