Brewing news USA, PA: 633 Brewing to open to the public on February 27

633 Brewing will be opening to the public on Saturday, Feb. 27 from 4-9 p.m. after 16 months of preparation and renovations, the Waynesboro Record Herald reported on February 24.

Located at 118 Walnut St. in Waynesboro, next to Montezuma’s restaurant, the craft beer establishment owned by Kevin Barrick and Heather Weeks will be serving up some original craft brews.

“We will have on draft an American ale, a brown ale, a hazy IPA and a Costa Rican cold coffee stout made from Brio Coffeehouse coffee,” Barrick said. “We are breaking in a lot of new equipment, and I’m really pleased with the four we are looking to put out there.”

The interior offers seating, a high-top bar, a photo wall documenting the history of Waynesboro, a stage area for live music and a view into their brew house from the main seating area.

“The installation of the garage door was kinda forced upon us. We wanted an open layout where we could be brewing on a Saturday afternoon and customers could see in, but we were told our brew house had to be totally closed in, but I didn’t want to make the space feel closed in,” Barrick said. “One day we were sitting around looking at the space and we both decided on a garage door with glass. It just so happened that this worked out in our favor and we actually like this design better.”

Opening up a brewery has been a longtime goal. “It’s been a long year,” Weeks said. “Getting a lot of our equipment took a long time, we were still getting equipment up until two weeks ago. When you're opening a business you have your own challenges you have to go through, and then you throw COVID on it. The biggest thing has been getting deliveries.”

In addition to in-house brews, 633 will be offering live music nights on their stage and finger foods to enjoy while visiting.

“We have already done a sound test and found a comfortable level where people can come in and talk and enjoy some music,” Barrick said. “We are planning on having a variety of genres from rock, country and bluegrass to Irish folk music. We don’t want to be tied to one type of music. I’m a huge music fan and I’m excited to bring that here.”

Following the late February opening of 633, the brand is set to expand later this year to include the property at 29 E. Third St. to open The Bistro at 633 Brewing. Expansion into that space is scheduled to start in June. “Once we have that space we will be close to 10,000 square feet,” Weeks said. “Access will be available through back of brewery, we want this to be a community space where families can come and have a meal together.”

Looking back over the last 16 months, the space has come a long way to make it to its current layout.

“I can't emphasize enough the energy that went into this space from all of our friends family, contractors and other breweries that have helped us,” Barrick said. “It’s been a complete team effort to get this place going, and I am forever grateful to everyone who stepped though these doors to help us; it shows that they believe in you and want you to succeed.”
