⭐Our experts' top tips for brewing exceptional beers:
Pale Ale: Balance is everything. Target 25–40 IBU and 4.5–6.5% ABV for a bright golden beer with generous body and measured bitterness – aromatic and highly drinkable.
IPA: Let aroma shine. Prioritise citrus and tropical fruit over heavy bitterness. To maximise hop expression, go for a heavy dry hop towards the end of fermentation (or even as early as day 2–3 after pitching) and let it sit for 2–4 days. Keep oxidation to a minimum to lock in those aromas.
Watch out for hop creep: Hop enzymes can restart fermentation late, leading to over-carbonation and off-flavours. Monitor final gravity closely after dry hopping.
💡 Water tip: adjust your water profile too. A sulphate-forward water (SO₄ > Cl⁻) will create a drier, more hop-driven IPA, ideal for West Coast styles. A more balanced profile (SO₄ = Cl⁻) will support harmony between malt and hops, perfect for Pale Ales and NEIPAs.
