Ricetta di whisky - Whisky di malto di segale

Caratterizzato da note rotonde e ricche di tabacco, rovere carbonizzato e butterscotch, con un tocco piccante di segale e un calore pepato, il whisky di segale è completato dalla morbidezza dell'acero e della ciliegia dolce per fornire un profilo aromatico pesante ed equilibrato, ma complesso.
È solidamente ancorato alla speziatura della segale con un po' di mela e miele. Il whisky di segale offre sia spezie che sapori fruttati come la prugna e la marmellata.
Questo tipo di whisky deve essere invecchiato per 10 anni in botti di rovere. L'invecchiamento in rovere smorza il sapore della segale con note di vaniglia, mentre la totale assenza di mais rende questa bevanda distinta e gustosa.

Château Rye 6 kg
LIEVITO
SafSpirit M-1 70 g
Temperatura di ammostamento
Fase 1: Ammostamento
Ammostare in 75 litri d'acqua a 65°C
Lasciar riposare a 63°C per 75 minuti
Lasciar riposare a 72°C per 25 minuti
Fase 2: Filtrazione
Separare il mosto dai grani esausti a 78°C
Fase 3: Cottura (opzionale)
Durata: 10 minuti
Fase 4: Raffreddamento 22°C
Fase 5: Fermentazione
Fase 6: Distillazione
