Château Cara Blond® 浅色焦糖麦芽 2.3 kg
Château Cara Clair® 淡色焦糖麦芽 1 kg
Château Wheat Blanc® 小麦麦芽 1 kg
酒花
Polaris 42 g
Perle 50 g
Cascade 50 g
Mosaic 50 g
酵母
SafAle BE-256 70 g
SafAle F-2 (二次发酵) 3 g
酿造糖
酿造白糖 0.6 kg
糖化时间
第一步:糖化 (pH 5.4)
初始温度设定在62°C,搭配80升水,并保持45分钟
随后逐渐将温度升高至72°C(每分钟升高0.5°C)
在72°C下,静置10分钟
温度调到78°C,静置2分钟
第二步:过滤
用75°C的水过滤麦汁
第三步:煮沸
煮沸时间:1小时,温度:100°C
煮沸5分钟后加入Polaris酒花
煮沸65分钟后,加入其他酒花和酿造糖
过滤残渣
第四步:冷却至27°C
第五步:发酵
在27°C下进行发酵
第六步:熟成
至少熟成两周
