糖化温度
第一步:糖化
初始温度设定为62°C,将pH值调节到 5.4 并保持 45 分钟
温度调到 72°C,静置 15 分钟
温度调到 78°C,静置 2 分钟
第二步:过滤
用 75-78°C 的水过滤麦汁
第三步:煮沸
煮沸时间:70 分钟
沸腾时即可加入East Kent Golding Pellets 酒花
煮沸结束前 10 分钟,加入 Saaz 颗粒酒花和黄糖(Cassonade)
第四步:冷却
冷却至 24°C
第五步:发酵 在 25°C 下发酵
第六步:熟成
在 3°C 下熟成两周
