浓缩果汁(草莓,覆盆子,樱桃,接骨木果,蓝莓) 4-6 l
糖化温度
第一步:糖化
初始温度设定为62°C,保持70分钟
温度调到72°C,静置15分钟
温度调到78°C,静置2分钟
第二步:过滤
用78°C的水过滤麦汁
第三步:煮沸
煮沸时间:90分钟;温度:100°C
麦汁体积减少6 - 10%
煮沸15分钟后加入Liberty酒花,煮沸80分钟后加入Perle酒花
过滤残渣
第四步:冷却至24°C
第五步:发酵
在26-27°C下,加入上述酵母发酵7天
第六步:熟成
熟成期至少2周
