Brewing news USA, KY: Maysville Brewing Company under construction in Maysville

A new brewery will be setting up shop in Maysville soon, the Ledger Independent reported on April 5.

The Maysville Brewing Company is currently under construction in the Limestone Square Building on West Second Street in downtown.

The brewery will be opened by Tiffany and Brandon Fields.

The couple said the brewery had been a dream for many years.

“My husband has wanted to do this for probably 12 years now,” she said. “It’s been a dream of his for a long time. The timing was never right and location was never right. When William started on this building, I found out about it and told my husband about it. We thought it was perfect for what we wanted to do. This was just the perfect space.”

Brandon Fields said it all started with brewing at home.

“I used to brew at home and people really liked,” he said. “They told me I should sell it. I started with the kits and decided I wanted to make my own recipes. I tried it and they were really good.”

The beer brewed in-house will be served at the bar, though the couple does not want the brewery to be mistaken for a bar.

According to Tiffany Fields, the couple plans to start out very small with just a six-tap system, meaning they will only have six beers on tap with a different beer on each tap. Eventually, they hope to also bottle beer.

“All of the beer we will serve here will be brewed by my husband,” she said.

Tiffany Fields said the front area of the building will be a sitting area and a bar.

“We will have some lounge type seating in the corner,” she said. “From the brick wall, we’ll have a bar that comes out in an L shape where we will have seating there. We’ve also talked about doing one of the bar height leaning bars.”

“There’s nothing wrong with the bars,” Brandon Fields said. “We just want this to be a place where you can go to relax. If someone wants to come down and work on their laptop while drinking some craft beer, they’ll be able to do that. It’s a brewery first with a tap out in the front.”

The back of the building will be where the beer is brewed by Brandon Fields.

“We will be brewing with a gas propane burner starting off since we’re going to be small,” she said. “All of our extra kegs will be kept back here.”

Tiffany Fields said she and her husband had looked at other locations previously, but it was not until they found the Limestone Square building that they decided to open the brewery.

“Over the course of the years we had looked for locations,” she said. “It would eventually just go away and it never felt right. Then something clicked with this location. My husband and William talked. The look of the location with the brick wall and vintage look was just perfect.”

Friday, April 5 was the first time Tiffany Fields had entered what will become the brewery since

“This is the first time I’ve been here since the cosmetic work was finished,” she said. “It’s exciting and kind of overwhelming. We’ve had a great response from the community of Maysville. We’re excited about how busy we anticipate to be and how busy people tell us we’re going to be. But, we’re excited.”

Tiffany Fields said she hopes the brewery will be open by the end of May. They will begin by selling five to six ales and eventually will have mead and ciders.

“The beer will be traditional,” he said. “We’ll, maybe, put a twist on things, but I don’t want the beers to be crazy.”

Mason County Industrial Authority Director Owen McNeill said he was pleased to see the brewery opening in town.

“I think the fact that the Fields family has recognized the opportunity that downtown Maysville represents for their Limestone Brewing Microbrewery is fantastic,” he said. “The entrepreneurial spirit that Sassafras and the Limestone Brewery represent is the perfect example of downtown revitalization, not only across Kentucky, but nationally. These microbreweries are popping up in small towns across America and doing phenomenally well. In fact, interestingly enough, the CEO of PPI, Roger Brown, described a similar microbrewery that opened in Pella, Iowa, (PPI’s Headquarters) with a downtown smaller than Maysville’s. He described how phenomenally well that business was going with waiting lines to enter. From discussions and observations such as that, as well as the passion that the Fields family exudes regarding their product, I’m truly excited for downtown Maysville.”
