Brewing news USA, CA: True Symmetry Brewing Company is Suisun City’s newest brewery

Brewmaster Jason Ledford describes Suisun City’s newest brewery as “a cool space where you can come in and enjoy yourself”, the Fairfield Daily Republic reported on May 11

The Bay Area Rapid Transit police sergeant and Suisun City native proudly points out that True Symmetry Brewing Company is a dream come true to both do what he loves and share his brewing with his neighbors.

“This is my hometown,” Ledford said.

He grew up within sight of True Symmetry’s location in the southeast corner of the Marina Shopping Center.

The brewery itself has been a year in construction with work setting up vats, building the taproom and preparing all the beers for a late March family-and-friends soft opening.

Suisun City’s second brewery opened to the general public in April. Ledford is partnering with his wife, Chasity Ledford, and friend and firefighter Jessie Reinosa.

Ledford’s family, such as dad Geary Ledford and brother Scott Ledford, also pitched in with work that included building the signature bar.

Ledford calls location a great fit and said the city’s water supply is good “and that’s a big plus.”

“The city has been fantastic,” Ledford said of the help he has been given in starting his business.

Ledford has been home-brewing since 1999, when Chasity bought him a small brewing kit for Christmas.

He went on to win several brewing awards, attended a program in Northern England that got him a diploma in British Brewing Technology and was mentored by brewmaster Chris Miller of Berryessa Brewing.

It was only appropriate that the first beer he offered on opening was an Irish Stout, which he named Sam-34 Stout after a friend who was killed in the line of duty.

Ledford’s brewing “has always been my release” from the stress of his work. He said he takes joy in coming up with creations such as the West Wind IPA, the Monk of the Marsh Belgian Dubbel, Tule Fog and the Duck Streets IPA, all with Suisun-friendly names.

Now he has 10 styles of beer on tap, another four in casks “and a ton of recipes at home that may make it to True Symmetry in time.

It is now open from 3 to 9 p.m. Fridays, noon to 9 p.m. Saturdays and from noon to 6 p.m. Sundays. Food is provided by rotating food trucks and nearby restaurants.

Ledford said that Symmetry’s brewing philosophy is about balance. In his business statement, he says, “We believe that life is about balance and your beer should be no different.”

“The most important aspect of our business plan is to provide top-quality ales and lagers. Our goal is offer not just beer, but a memorable experience in every glass. We aim to make all beer styles, with a strong emphasis on English and Belgian ales,” Ledford said.

His goal is to gradually increase production, and to have a “nice sustainable business” where people can come to enjoy a good selection of site-brewed beers.
